  1. 2 c Wholewheat pastry flour

  2. 2 ts Baking powder

  3. 1 ts Cinnamon

  4. 1/2 ts Nutmeg

  5. 1/4 ts Salt

  6. 2 Bananas, ripe & mashed

  7. 1 c Pumpkin, cooked & pureed

  8. 1/4 c Maple syrup

  9. 1/4 c Oil

  10. 1 ts Vanilla

  11. 1/2 c Walnuts, chopped

  1. Preheat oven to 350F. Lightly oil a loaf pan & set aside.

  2. Sift together flour, baking powder, cinnamon, nutmeg & salt. Blend the remaining ingredients, except the walnuts, until smooth. Stir wet ingredients into dry ingredients until just combined. Fold in the walnuts.

  3. Spoon batter into prepared loaf pan. Bake until a knife inserted into the centre comes out clean, approximately 1 hour. Cool on a wire rack before slicing.
