  1. 4 7-ounce beef tenderloin steaks

  2. 1 tablespoon olive oil

  3. 6 sweet potatoes, peeled Sunflower oil for deep frying Mixed lettuce leaves, to serve FOR THE BEARNAISE:

  4. 2 tablespoons white wine vinegar

  5. 2 tablespoons white wine

  6. 1 tablespoons chives, snipped

  7. 2 tablespoons Italian parsley, chopped

  8. 1 3/4 sticks butter (14 tablespoons), melted

  1. Rub the steaks with olive oil. Heat a grill pan until hot. Sear the steaks on both sides and then cook to preference.
