  1. Shrimp Stuffed Mirlitons

  2. 4 large mirlitons (may substitute squash)

  3. 1 cup onion

  4. 1 tsp minced garlic

  5. 1/2 cup chopped celery

  6. 3 Tbsp shortening

  7. 3/4 lb fresh, gulf shrimp

  8. 1/2 cup grated sharp cheese

  9. 1/4 cup buttered bread crumbs

  10. 1/2 tsp thyme

  11. 1/4 tsp red pepper

  12. 1 tsp salt

  13. Parboil mirlitons until tender. Cut in half and scoop out meat.

  14. Cut into 1/2-inch pieces. Set aside mirliton shells and meat.

  15. Saute onion, garlic, thyme and pepper in a heavy skillet over medium

  16. heat until transparent. Do not brown. Add celery and cook until

  17. tender. Add shrimp and saute for 2 minutes until shrimp have just

  18. turned pink. If shrimp are large, cut into 1 inch pieces. Add

  19. mirlitons and salt, mix with shrimp, cheese and mixture in skillet.

  20. Fill shells, cover with additional cheese and bread crumbs and bake

  21. 20 minutes at

  22. 350 degrees until crumbs are browned.
