  1. 1 c Unbleached white flour 

  2. 1/2 ts Baking soda

  3. 1 c Whole wheat flour 

  4. 2 ea Egg whites

  5. 1/4 c Sugar or less or none 

  6. 1 c Non-fat buttermilk

  7. 2 ts Baking powder 

  8. 1/4 c Canola oil

  1. Preheat oven to 400 degrees. Thoroughly mix flours, sugar, baking powder and baking soda. Form a well and add egg whites, buttermilk and oil. Stir only until dry ingredients are moistened. Fill lightly oiled or paper lined muffin tins about 2/3 full. Bake for 25 minutes or until done. VARIATIONS: Add blueberries,apples, raisins or dates. Serve warm.
