  8. 1 Onion -- chopped

  9. 1 cup Bulgur

  10. 1/4 cup Dried apricots -- diced

  11. 2 cups chicken stock -- Boiling

  12. 1/4 cup Parsley -- fresh chopped (opt)

  13. Salt & freshly ground pepper

  14. In nonstick skillet, melt margarine over medium heat. Cook onion, stirring

  15. softened. Stir in bulgur and cook, stirring for 1 m

  16. inute.

  17. Stir in, apricots and stock; cover and simmer over low heat for 15 min or until

  18. liquid is absorbed. Stir in parsley, season to taste- - - - - - - - - - - - - - - - - -
