  1. 2 1/2 cups all purpose flour

  2. 2 cups sugar

  3. 1/2 Tablespoon baking soda

  4. 1 1/4 tsp. salt

  5. 2 tsp cinnamon

  6. 1 tsp nutmeg

  7. 3/4 cup vegetable oil

  8. 1 cup orange juice

  9. 3 eggs

  10. 3 Tablespoons grated orange rind

  11. 1 (15 oz) can solid packed pumpkin

  12. 1 tsp orange extract

  13. 1 tsp. rum flavoring

  14. 1/2 cup golden raisins

  15. 1 cup chopped nuts

  1. Mix flour,sugar,baking soda,salt,cinnamon and nutmeg in a large bowl,stirring until well mixed.

  2. Add oil, orange juice and eggs,mixing well after each addition.

  3. Fold in pumkin and mix well,add flavorings and grated orange rind and raisins and nuts if desired. Stir mixture until well blended.

  4. Coat bundt pan with non stick spray and pour batter into pan.Fill pan 3/4 full- if there is too much batter pour excess into loaf pan and bake.

  5. Bake at 350 for 45min- 1 hour or until tests done.

  6. Remove from oven, let cool 15 minutes and remove from pan and cool completly.

  7. After cooled glaze with 1 cup confectioners sugar mixed with enough orange juice to make a pourable glaze. NOTE: This cake can also be baked in loaf pans if desired.
