  2. 3/4 cup 177ml Instant polenta

  3. 3/4 cup 148g / 5 1/5oz Grated Parmigiano-Reggiano - (to 1)

  4. 1 tablespoon 15ml Unsalted butter

  5. Salt - to taste

  6. Freshly-ground black pepper - to taste

  1. Bring water to a boil in a 2-quart saucepan and slowly add polenta, whisking constantly. Cook polenta over moderate heat, whisking constantly, 5 minutes. Remove from heat and whisk in cheese, butter, and salt and pepper to taste. Serve immediately.
