  1. 1 cup Diced Carrots

  2. 1 cup Diced Celery , use some leaves

  3. 1 cup Diced Onion

  4. 2 cloves Garlic , minced

  5. 1/2 cup Diced Green Pepper

  6. 1 cup sliced Crimini Mushrooms

  7. 2 tsp Hot Sauce

  8. 4 Tbsp Butter

  9. 4 Tbsp Olive Oil

  10. 1 cup Diced Tomatoes

  11. 1 cup Diced Smoked Sausage

  12. 1 cup Diced Cooked Chicken

  13. 6 cups Low Fat Low Salt Beef Broth or Stock

  14. 1/4 cup Long Grain Rice

  1. In a large stock pot, over medium heat, cook carrots, celery, onion, garlic, green pepper, mushrooms and hot sauce in butter and olive oil for 8 minutes. Add tomatoes, sausage and chicken, then cook 5 minutes more. Add beef broth and rice, then cook 10 minutes or until rice is done. Ladle into 4 bowls and serve.
