  1. MEATLESS MEATLOAF

  2. 2 raw white potatoes

  3. 1 cup onions, chopped

  4. 1 cup dry bread crumbs or wheat germ

  5. 1 cup pecans (or walnuts or sunflower seeds)

  6. 2 well-beaten eggs (or for a vegan variety, add some tamari and delete salt)

  7. 1 tsp salt, unless you added tamari

  8. Dash pepper

  9. basil or any other favorite "meat loaf" spices, like mustard.

  10. Preheat over to 350.

  11. Put potatoes, onions, nuts, and bread through a food processor so

  12. it is all ground up, like meat loaf. Mix these ingredients well,

  13. then add the rest of the ingredients.

  14. Put in well-greased loaf pan and bake until 1 hour or until firm.

  15. Stays firm when cold, so it is very good for meatloaf sandwiches.
