  1. 12-16 unpeeled large raw prawns

  2. A little sunflower oil , for brushing

  3. For the thai dipping sauce

  4. 2 tbsp thai fish sauce (nam pla)

  5. 1 lime , juice only

  6. 2 tbsp water

  7. 3 red bird's eye chillies , sliced thinly

  1. Preheat your grill or barbecue and allow it to get very hot. Brush the prawns with the sunflower oil and cook them for 2 minutes on each side, until they are cooked through and nicely charred on the outside.

  2. The dipping sauce is simply made by mixing all the ingredients together.

  3. Serve together.
