  8. 3 cucumbers

  9. 6 pickled dill cucumbers

  10. 2 red onions

  11. 1 pound plum tomatoes

  12. 1/4 cabbage -- white

  13. 2 serrano peppers -- or 1 Thai

  14. 3 oranges -- juice

  15. 1/2 pink grapefruit -- juice

  16. 2 limes -- juice

  17. 1 tablespoon salt

  18. Peel the cucumbers, scoop out the seeds, slice, sprinkle over half the salt

  19. and leave to marinate while you prepare the remaining ingredients.

  20. Roughly chop the pickled cucumbers, finely dice the red onion, dice the

  21. tomatoes, shred the cabbage and seed and dice the chiles. Place all the

  22. vegetables in a bowl, squeeze over the citrus juices, sprinkle with salt,

  23. and stir well. Chill for up to 3 days before serving. Serve with burgers or sausages.
