  6. 1 T Lemon Juice

  7. 2 c Fresh Blueberries -- OR 2 c Frozen Blueberries

  8. -Partially Thawed

  9. 1 c Unbleached All Purpose Flour

  10. - -- Sifted 2 t Baking Powder

  11. 1/4 t Salt

  12. 2 T Shortening

  13. 1/2 c Granulated Sugar

  14. 1 lg Egg

  15. 1/2 t Lemon Flavoring

  16. 1/4 c Milk

  17. Preheat the oven to 400 Degrees F. Sprinkle the lemon juice on the

  18. 6 custard cups

  19. 2/3rds full.

  20. Sift the next 3 ingredients together, and set aside. Work the

  21. shortening with a spoon until creamy. Gradually add the sugar,

  22. working until light. Beat in the egg and flavoring with a spoon. Add

  23. the flour mixture and milk all at once, stirring to mix. Spread on

  24. 400 Degrees F., for minutes or until done.

  25. TO SERVE:

  26. Turn out with the berry side up. Serve warm, with heavy cream or Vanilla Ice Cream.
