  1. 2 beer battered frozen fish filets

  2. iceberg lettuce

  3. grape tomatoes

  4. 1 heaping tablespoon mayo

  5. 1 heaping tablespoon sour cream

  6. 1 or 2 green onions , finely chopped

  7. chipotle powder to taste

  8. lime juice to thin to sauce consistency

  9. 2 corn tortillas

  1. Mix mayo, sour cream (or yogurt), green onions, chipotle powder, and lime juice.

  2. Prepare fish according to package directions.

  3. Chop fish into bite-sized pieces, halve grape tomatoes and shred lettuce (or cabbage). Warm corn tortillas to make them more flexible.

  4. Assemble tacos, top with sauce and garnish with cilantro if desired. Enjoy your impromptu creation!
