  1. 4 pieces cod fillet (about 115g/4 oz each) skinned

  2. 2 tomatoes, sliced

  3. 50g/2 oz fresh whole meal breadcrumbs

  4. 30ml/2 tbsp chopped fresh parsley

  5. finely grated rind and juice of 1/2 lemon

  6. 5ml/1 tsp sunflower oil

  7. salt and ground black pepper

  8. Serves 4

  1. Method :

  2. Preheat the oven to 200C. Arrange the cod fillets in a wide, ovenproof dish.

  3. Arrange the tomato slices on top. Mix together the breadcrumbs, fresh parsley, lemon rind and juice and the oil with seasoning to taste.

  4. Spoon the crumb mixture evenly over the fish, then bake for 15-20 minutes. Serve hot.
