  1. 1/4 cup bacon grease

  2. 1 onion , chopped

  3. 1 green bell pepper , chopped

  4. 3 stalks of celery , chopped

  5. 3 tsp minced garlic

  6. 1 can Mild Rotel

  7. 1 teaspoon chili powder , or to taste

  8. 1 cup uncooked white rice

  9. 1 8 ounce can of tomato sauce

  10. 2 cups beef broth

  11. Salt & Pepper to taste

  1. In large skillet over medium heat saute onion, green bell peppers, celery, garlic, & spices in bacon grease about 10 minutes, stirring often.

  2. Add rice, stirring often, until rice lightly brown.

  3. Add the can of Mild Rotel, tomato sauce, and beef broth.

  4. Bring to a boil. Reduce heat to low and cover. Simmer for 20 minutes.
