  1. 1/4 cup sugar-free orange marmalade.

  2. 2 tbsp low-sodium soy sauce.

  3. 2 tbsp rice-wine vinegar.

  4. 1 tbsp canola oil.

  5. 1/2 tsp ground ginger.

  6. 1/4 tsp ground red pepper flakes.

  7. 4 boneless, skinless chicken breasts, pounded to

  8. 1/2"-thickness

  1. Marinade: Stir together all ingredients, except chicken. transfer 1/3 cup marinade to bowl, cover, chill. Place chicken in lg resealable bag, set in deep bowl. Add remaining marinade to bag. Seal and turn, refrigerating 4 hrs. Drain chicken, discard marinade. Spray a lg skillet w/ cooking spray. Add chicken, cook 5-6 min per side, or until no longer pink inside. Transfer chicken to plater, keep warm. Add 1/3 cup reserved marinade to skillet, heat through. Serve over chicken.
