  1. --DOUGH-- 150 g (5oz) flour

  2. 40 g (1oz) caster sugar

  3. 1/2 ts Salt

  4. 1 tb Vanilla sugar

  5. 40 g (1oz) ground almonds

  6. 100 g (3oz) butter

  7. 1 Egg yolk

  8. --FILLING-- 3 Eggs

  9. 500 g (1lb) curd cheese

  10. 1 Lemon, grated rind of

  11. 210 g (7oz) icing sugar

  12. 200 ml (7 fl oz) crme frache

  13. 60 g (2oz) flour

  14. --SERVE WITH-- Raspberry or strawberry - pure To Drink: - Sweet white wine or white port

  17. 6. Roll out the dough and use to line a high-sided, loose-bottomed cake tin. Prick the base with a fork. Bake the dough shell blind for 10 mins. Make the filling. Separate the eggs. Press the curd cheese through a sieve. Mix together all the ingredients, except the egg whites. Beat the egg whites to form stiff peaks and fold them into the mixture. Pour the filling into the dough shell. Bake for approximately
