  1. 2 tsp canola oil

  3. 1/2 cup pre-sliced cremini mushrooms, chopped

  4. 2 cups fat free, reduced sodium chicken broth with defatted drippings from roast chicken

  5. 2 tbs cornstarch dissolved in

  6. 1/3 cup water

  1. Preparation: In a 2-quart saucepan, cook onions and mushrooms until softened. Add stock or broth and bring to a boil. Turn down heat and simmer for 10 minutes. Stir in cornstarch and water and simmer for 3 more minutes, stirring from time to time. Serves 6.
