  1. 4 cups thinly sliced potatoes ( I leave on the skins)

  2. 1 small onion choppped

  3. 3 garlic cloves , chopped fine

  4. 3 tbsp flour

  5. 4-6 tbsp butter

  6. 1/4 cup chives (fresh or dried)

  7. 1-1/4 cups Half N Half

  8. 1 tsp salt

  9. 1 tsp pepper

  10. 1/2 tsp paprika

  11. 1 tsp dried mustard

  12. 24 oz pkg of Shredded cheddar cheese Mix

  13. 1/2 cup parmesan cheese

  14. 1 cup blue cheese

  1. How to make it In boiling salted water, add sliced pototoes and parboil about 6-8 minutes only. In frying pan, saute butter with onion, chives & garlic for about 3-5 minutes. In bowl add flour, salt, pepper, paprika & mustard; mix Whisk into onion mixture and stir till pasty. Whisk in Half N Half and on medium low heat, whisk until it begins to thicken. In a buttered 9 x 13 pan, you will be doing 2 layers of each of: pototoes, sauce & cheese First layer: pototoes Second Layer: Sauce Third Layer: Cheeses; Note: (all blue cheese goes here) Repeat Layers ending with Cheeses Note: If it looks too dry; add more Half N Half, but not too much to flood it. Bake at 350 for 35-45 minutes or till pototoes are tender and cheeses are melted & golden brown Take out of oven and let sit for about 5 minutes
