  1. Dressing :

  2. 1 cup light olive oil

  3. 1/2 cup sugar

  4. 1/3 cup apple cider vinegar

  5. 1 Tbl poppy seed

  6. 1 Tbl grated onion

  7. 1 tsp salt

  8. 1 tsp dry mustard

  9. Salad:

  10. Bag of spring mix or head of green leaf lettuce

  11. crumbled feta cheese

  12. 1/4 - 1/2 cup sliced almond s, toasted

  13. 4 green onion s, chopped

  14. 1 Fuji apple chopped with skin on

  1. Dressing: Combine all ingredients in a blender then chill Salad: Toast the almonds in a skillet sprayed with cooking spray over medium-high heat. Stir constantly to avoid burninig. Remove from pan and allow to cool. Assemble all other ingredients in a salad bowl and toss gently with desired amount of dressing. Sprinke with toasted almonds.
