  1. 10 oz Pork tenderloin; boneless, cut into 2" strips

  2. 2 ts Olive oil

  3. 1 c Onion; chopped

  4. 2 cl Garlic; minced

  5. 1/2 ts Paprika

  6. 1/2 c Beef broth; low sodium

  7. 1 ts Cornstarch

  8. 2 sm Granny Smith apples; cored and coarsely chopped

  9. 1/4 ts Salt pn Ground red pepper

  10. 1 md Tomato; cut into wedges

  11. 4 c Egg noodles; cooked Parmesan cheese & parsleyfor garnish if desired

  12. 1. Place the pork strips on a rack over a tray. With a vented cover, microwave on HIGH for 1 minute; set aside.

  13. 2. In medium casserole, microwave oil on High

  14. 1 minute. Add pork, onion, garlic and paprika. With vented cover, microwave on Medium

  15. 5 minutes, stirring twice.

  16. 3. In 1-cup measure, stir broth and cornstarch until dissolved. Add to casserole with apples, salt and red pepper. Cover and microwave on High

  17. 4 minutes, stir and add tomato. Cover and microwave on High

  18. 3 minutes longer, or until apples are tender. Let stand, covered,

  19. 5 minutes.

  20. 4. To serve, place noodles on serving plate. Top with
