  1. 1/4 cup 49g / 1.7oz Margarine - melted

  2. 3 tablespoons 45ml Sugar

  3. 6 Egg whites

  4. 1 cup 62g / 2 1/5oz All-purpose flour

  5. 2 teaspoons 10ml Baking powder

  6. 12 oz 340g Cottage cheese, low-fat

  1. Melt margarine and add to sugar in mixer. In another bowl, beat egg whites until stiff. Add 1/3 of egg whites to margarine-sugar mixture. To this add flour and baking powder, mixing until smooth. Fold in remainder of egg whites and cottage cheese.

  2. Fill individual lined mufffin pans 2/3 full with batter. Bake 15 to 20 minutes at 400 degrees until golden brown.
