  1. 1-2 Little Gem lettuce, washed

  2. 2 tomatoes, de-seeded and chopped

  3. 100-150g (3-5oz) feta cheese, cubed

  4. 6-8 pitted black olives, sliced

  5. 1-2tbs freshly shredded mint

  1. Choose 6-8 even-shaped lettuce leaves and place them on a plate. Shred the remaining lettuce and place in whole lettuce leaves. Arrange tomato, feta and olives on top and scatter over mint. To make the dressing: Whisk together the oil, lemon juice and seasoning and pour over the salad. Grind over some black pepper and garnish with sprigs of mint before serving. Not suitable for freezing.
