  12. 1 package dried mixed fruit, chopped

  13. 1 teaspoon ground cinnamon

  14. 1 teaspoon salt

  15. 1 (14 1/2-ounce) can COLLEGE INN Light and Fat Free Chicken Broth

  16. 2 tablespoons olive oil

  17. 2 cups cooked chicken, cubed

  18. 1/2 cup orange juice

  19. 1/2 cup green onions, sliced

  20. 1/2 cup celery, sliced

  21. Leaf lettuce

  22. Toasted almonds or peanuts

  1. In a large bowl, combine couscous, dried fruit, cinnamon and salt.

  2. Bring broth and oil to a boil in a medium sauce pan. Pour over couscous mixture. Cover; let stand 5 minutes until liquid is absorbed. Fluff with a fork and cool to room temperature, about 30 to 40 minutes.

  3. Stir in chicken, orange juice, onions and celery. Serve on lettuce leaf; garnish with nuts.
