  1. Ingredients :Serves 4

  2. 250 g 3 tablespoons 1/4 225 ml 375 ml 1 tablespoon 60 g 375 g 60 g Glutinous rice, soaked in water for 5-6 hours

  3. Palm sugar, chopped

  4. Green food coloring

  5. Coconut milk

  6. Water

  7. Vegetable oil, for brushing

  8. Desiccated coconut

  9. Strawberries, hulled

  10. Golden caster sugar, or to taste

  1. Drain the rice and put it into aheavy-based saucepan with the palm sugar, food coloring, if using,coconut milk and water.

  2. Bring slowly to the boil.

  3. Reduce the heat and simmer until most ofthe liquid has been absorbed.

  4. The rice will firm up as it cools.

  5. Lightly oil 4 ramekins or moulds, pressthe rice into them and leave to cool.

  6. Meanwhile, dry fry the desiccated coconutuntil it is golden, and set aside to cool.

  7. Process the strawberries and caster sugarin a food processor or blender.

  8. Turn out the rice on to individual dessertplates, carefully pour the strawberry coulis around the edge.

  9. Sprinkle the tops with the toastedcoconut.
