  2. MACARONIA ME VOUTYRO - PASTA WITH BROWN BUTTE

  8. 1 lb Spaghetti or other pasta

  9. 1/2 lb Butter

  10. 1/2 c Kefalotyri or Parmesan

  11. -(Grated)

  12. Fill a large deep pot 3/4 full with water. Add salt

  13. and bring to a rolling boil. Add pasta slowly,

  14. without breaking the boil. Cook 10 minutes. Place a

  15. colander in sink and turn pasta into it. Rinse under

  16. hot running water, allowing the water to drain through

  17. the spaghetti.

  18. Heat the butter in a small saucepan to a honey brown.

  19. Watch it carefully for these minutes; it burns quickly

  20. and suddenly. Return spaghetti to large pot and dribble hot butter over it. Sprinkle with half the

  21. cheese and toss gently to mix.

  22. Transfer to a large ovenproof platter, sprinkle top

  23. 10 minutes at

  24. 350 F.
