  5. 1 Lemon, cut in half

  6. 2 lb Baby artichokes

  7. 2 1/2 tb Olive oil

  8. 3 md Garlic cloves, chopped fine

  9. 1 1/4 c Reduced chicken broth

  11. 3 tb Fresh Italian parsley,

  12. -chopped

  13. Freshly ground black pepper

  14. Cooked pasta of your choice

  15. Squeeze and reserve 2 1/2 tbs of lemon juice. Fill a mixing bowl with cold

  16. water and squeeze the remaining lemon juice into the water.

  17. With a small, sharp knife, pare and quarter the artichokes, adding them

  18. one by one to the bowl of water to keep them from discoloring.

  19. In a large skillet, heat the oil with the garlic over moderate to high

  20. 2 to 3 minutes.

  21. Meanwhile, drain the artichokes and pat them dry in a kitchen towel. Add

  22. 3 to

  23. minutes.

  24. Pour in the broth and reserved lemon juice. Bring to a boil, then toss

  25. with the parsley. Serve imediately over cooked pasta. Season to taste with

  26. black pepper. --
