  1. 1 tbsp olive oil

  2. 4x150 g welsh black beef fillets

  3. 100 ml madeira

  4. 100 ml beef consomme

  5. 200 g chestnut mushrooms

  6. 2 tbsp flat leaf parsley , finely chopped

  1. Method 1. Season the steaks with salt and freshly ground black pepper.

  2. Heat the olive oil in a heavy-based frying pan until hot, then cook the steaks for 3 minutes on each side, remove from the pan and keep warm.

  3. In a separate pan, bring the Madeira to the boil and reduce by half.

  4. Add the consomme and the mushrooms and cook for a further 5 minutes.

  5. Season the sauce with salt and pepper and stir in the parsley.

  6. Pour the sauce over the steaks to serve.
