  1. 6 hard boiled egg s, chopped fine

  2. 3 TBSP. Dukes mayonnaise

  3. 1 large sweet onion , finely chopped

  4. 1 1/2 cups (1 package, 8 ounce) cream cheese, softened to room temperature

  5. cup sour cream

  6. 7 TBSP Caviar ,

  7. 1 large or 2 medium lemons, thinly sliced, several sprigs of fresh parsley

  1. Grease sides and bottom of an 8 inch, spring foam pan. In a mixing bowl, combine eggs & mayonnaise blend until well blended. Spread this mixture into the bottom of the pan to make an even layer. Sprinkle with onions.

  2. In a large mixing bowl, combine cream cheese & sour cream, beating until very smooth. Drop this mixture onto the onions with a spoon, with a wet knife or spoon, spread this until it is evenly coated. Cover this with wrap and chill covered at least 3 hours, over night is best.

  3. At party time top with a layer of caviar, being sure of going all the way to the edge of the pan. Insert knife blade along the sides of the pan to loosen, then, remove the pan form, from the sides.

  4. Garnish with thin slices of fresh lemon and place sprigs of parsley in the center. Serve with small bread rounds or a nice cracker.
