  7. 2 c Adzuki beans

  8. 1 lb Japanese sweet rice

  9. 1 t Black sesame seeds

  10. 1 t Salt

  11. 1/4 ts Soy sauce

  12. A day before you plan to serve, place the beans in a

  13. colander or sieve & wash them under cold running

  14. 2 qt pan, cover with

  15. cups of cold water & bring to a boil over high heat.

  16. Reduce the heat to its lowest point & simmer the beans

  17. uncovered for 45 minutes, until they are tender but

  18. still intact. Drain the beans through a large sieve or colander set over a large mixing bowl. Reserve the

  19. liquid & cover the beans with cold water in another

  20. bowl. Cool to room temperature. Stirring with a large

  21. spoon, wash the rice in a large colander under cold

  22. running water until the draining water runs clear.

  23. Drain thoroughly & add the rice to the reserved bean

  24. liquid. Soak for 8 hours or overnight, covered, in

  25. the refrigerator. Drain the rice, discard the soaking

  26. liquid & combine the rice and 1 c beans in a bowl.

  27. Steam the rice & beans in an Oriental steamer, or put

  28. them in a colander & set the colander in a large pot

  29. filled with 1 1/2 water. Bring the water to a boil

  30. over high heat, cover the pan tightly, & steam for 40

  31. minutes, replenishing the water in the pot if it boils

  32. away. Meanwhile, heat a small skillet over high heat

  33. until a drop of water flicked across its surface

  34. evaporates instantly. Add the sesame seeds &, shaking

  35. 2 to 3 minutes, until the seeds

  36. are lightly toasted. Transfer the seeds to a small

  37. 1 ts salt &

  38. 1/4 ts soy sauce.

  39. Transfer the steamed rice & beans to a large serving

  40. bowl or individual bowls. Serve hot or at room

  41. temperature as a sweet course with kuri fukume-ni.

  42. Sprinkle with the sesame seeds before serving. - - - - - - - - - - - - - - - - - -
