  1. 450g pork fillet, cut into thin strips

  2. 2 tbsp groundnut oil

  3. 1/4 jar

  4. Blue Dragon Thai Red Curry Paste

  5. 1 tbsp Blue Dragon Minced Garlic (or 2 cloves of fresh garlic crushed)

  6. 1 tbsp Blue Dragon Minced Ginger (or a 2cm piece of fresh ginger peeled and finely chopped)

  7. 1 can Blue Dragon Coconut Milk

  8. 2 tsp sugar

  1. Cut the pork fillet into thin slices. Heat the groundnut oil in a large wok and fry the Thai Red Curry Paste, Minced Ginger and Garlic for 30 seconds.

  2. Add the Coconut Milk to the wok, heat and then add the pork.

  3. Once the pork is cooked, add the juice of half a lime and sugar, to taste.

  4. Once this is piping hot serve scattered with thinly shredded red chilli.
