  2. 2 cups all purpose flour

  3. 3/4 cup sugar

  4. 2 1/2 tsp. baking powder

  5. 1/2 tsp. salt

  6. 1 cup mashed banana

  7. 1/3 cup vegetable oil

  8. 1/3 cup milk

  9. 1 large egg, beaten to blend

  10. 3/4 cup shelled, chopped pistachios, divided

  1. Preheat oven to 350 degrees. Grease the inside of a 9x5 inch loaf pan. Stir together flour, sugar, baking powder and salt in a large bowl. Add bananas, oil, milk, egg and 1/2 cup pistachios and stir until evenly moistened. Spread the batter evenly into the prepared pan. Sprinkle the remaining 1/4 cup pistachios over the top of the batter. Bake bread about 50 to 60 minutes until a toothpick comes out clean. Let bread cool 10 minutes in the pan. Remove the pan and cool bread completely on a rack.
