  1. Cajun Chicken Bits

  2. 1 lb boneless chicken breast

  3. 1 tbs black pepper

  4. 1 tbs garlic powder

  5. 1 tbs white pepper or cayenne pepper

  6. 1 tbs thyme

  7. 1 tbs olive oil

  8. 3 tbs soy sauce

  9. 2 tbs cornstarch

  10. 1/2 stick butter

  11. Cut chicken into 1 inch pieces. Place in a bowl and pour in soy

  12. sauce. Mix in cornstarch to fully coat all pieces. Place in

  13. refrigerator for 1/2 hour.

  14. In a sauce pan, slowly melt butter. Mix in the peppers, garlic

  15. powder, and thyme to create a paste.

  16. Once chicken is fully marinated, pour oil into skillet and fully

  17. coat bottom. Pour in the chicken pieces, and stir constantly to

  18. evenly brown. Once brown, pour in the cajan paste and mix in the

  19. chicken pieces until evenly coated.

  20. Continue stirring until fully cooked. Serve with rice, beans, and and maybe some corn bread.
