  7. 3 tablespoons vegetable oil

  8. 1 large onion -- coarsely chopped

  9. 1 large green pepper -- coarsely chopped

  10. 2 garlic cloves -- minced

  11. 1/2 teaspoon celery seeds

  12. 1/4 cup dijon mustard

  13. In a large skillet, heat the oil and cook the onion and green pepper over

  14. medium-low heat, stirring often, until the vegetables are softened and tinged with gold, about 10 minutes. Add the garlic and celery seeds.

  15. Continue to cook for S minutes. Stir in the mustard and cook, stirring, for 3 minutes to blend flavors.

  16. The mustard sauce can be used immediately or cooled and refrigerated,

  17. covered, for up to 2 days. Reheat gently to use.

  18. Notes: Makes about 2 cups; use for hot dogs and hamburgers, pork chops, and spareribs, fish steaks such as salmon or swordfish, or shrimp. We went to

  19. the circus every summer when I was a child. My fondest food memory is hot

  20. dogs on a bun slathered with golden pan-fried onions and peppers simmered

  21. in mustard. Summer and the circus are still magical times for me, so I have

  22. made this mustard for my children since they were little. They call it
