  2. 2 tbsp. vegetable oil

  3. 3 pounds beef bottom round roast

  4. 1 envelope dry onion soup mix

  5. 12 ounce jar beef gravy

  6. 2 beef bouillon cubes

  7. 14 1/2 ounce can chopped Italian style tomatoes

  8. 2 cups water

  9. 3 cups frozen, thawed mixed vegetables

  1. Heat oil in a large skillet over medium heat. Add roast and cook about 8 to 10 minutes until browned on all sides. Stir together soup mix, gravy, bouillon, tomatoes and water in a crock pot. Add roast and turn to coat. Cover and cook roast 8 hours on Low, turning occasionally. Add mixed vegetables and cook roast an additional 2 hours, stirring occasionally. Remove the roast from the crock pot and transfer to a cutting board. Slice beef and serve with vegetables and sauce.
