  1. 1 lb plum (Roma) tomatoes (about 6 tomatoes)

  2. 1 jalapeño chile, seeded

  3. 1 clove garlic, peeled

  4. 1/4 medium white onion

  5. 1/2 teaspoon chicken tomato bouillon granules

  6. 1/4 teaspoon salt

  7. 1/2 cup chicken broth

  8. 1 tablespoon vegetable oil

  1. In blender, place all ingredients except oil. Cover; blend until smooth.

  2. In 2-quart saucepan, heat oil over medium-high heat. Add tomato mixture; cook about 5 minutes or until hot. Serve warm or cold with tortilla chips, as desired. Cover and refrigerate any remaining salsa.

  3. To blend the ingredients, you could use a food processor instead of a blender.

  4. This salsa, which is a little thinner than a typical bottled salsa, also makes a great enchilada sauce.
