  1. 1/2 cup butter

  2. 2/3 cup sugar

  3. 1 egg slightly beaten

  4. 1 teaspoon lemon extract

  5. 1/2 cup yellow cornmeal

  6. 1 cup flour

  7. 1 teaspoon baking powder

  8. 1/4 teaspoon salt

  9. 1/2 cup raisins

  1. In a mixing bowl, beat butter and sugar together until creamy. Blend in the egg and lemon extract. In a separate bowl, combine the cornmeal, flour, baking powder, and salt. Add the flour mixture to the butter mixture. Mix well. Stir in the raisins. Drop batter by teaspoons onto a lightly greased baking sheet. Bake at 375 for 12 to 14 minutes or until bottom of cookies are lightly browned. Remove from oven. Let cookies cool for 1 minute; remove from baking sheet.
