  1. 2 lb Stew beef, cubed

  2. 2 tb Parsley, chopped

  3. 1 Green pepper, diced

  4. 1 c Ketchup

  5. 3 c Celery, diced

  6. 1 c Lima beans

  7. 6 Carrots, sliced

  8. 1 c Green peas

  9. 1/2 c Split peas

  10. 1 c Green beans, chopped

  11. 1/2 ts Thyme

  12. 1 c Spinach, chopped

  13. 1 tb Salt

  14. 1 Large potato, cubed

  15. 1 Onion, chopped

  16. 2 Onions, sliced

  17. 3 1/2 qt Water

  18. 1 1/2 c Corn

  19. 3 Medium tomatoes, cubed

  1. In large kettle, cover beef with water and add chopped onion, salt, thyme.

  2. Bring to boil.

  3. Skim fat from surface.

  4. Add split peas, cover and simmer over low heat, 3-4 hours.

  5. Add all remaining ingredients.

  6. Cover and simmer 30 minutes.

  7. Adjust seasoning.
