  1. 1 cup Mahatma (r) Rice 1 medium Onion, chopped 1 Garlic clove, minced 4 teaspoons Bbutter, divided cup Chopped almonds, toasted 1 can Chopped pimientos (1 oz) 2 cans Mushrooms, drained and chopped (2 1/2 oz) Salt to taste Pepper to taste cup Whipping cream Cayenne pepper

  1. Preheat oven to 350'F. Prepare rice according to package direction. Set aside. In a medium skillet saute onion and garlic in butter. Add almonds, pimientos, mushrooms, salt and pepper. Fold in cooked rice. Fold mixture into an oiled 2-quart baking dish. Pour whipping cream over rice mixture. Bake at 350'F. for about 15 minutes, or until thoroughly heated.
