  1. Crockpot Neopolitan Tostada

  2. 3/4 lb ground turkey

  3. 1 eggplant, cubed

  4. 1 c salsa

  5. 6 oz can tomato paste

  6. 1/4 c fresh parsley, chopped

  7. 1 tb chili powder

  8. 1 t ground cumin

  9. 1 t dried oregano

  10. 10 oz pkg frozen corn, thaw

  11. 4 pita rounds, halved and toasted

  12. 1/2 c yogurt

  13. 2 c lettuce, shredded

  14. 1/2 c olives, sliced

  15. 1/2 c cheddar cheese, shredded

  16. Combine turkey, eggplant, salsa, tomato paste, parsley, chili

  17. powder, cumin, oregano and corn in slow cooker. Cover and cook on

  18. 5 to 6 hours. Stir with a fork to break up large chunks of

  19. turkey. Spoon about 3/4 cup cooked turkey mixture on each pita

  20. half. Top with yogurt, lettuce, olives and cheese, if desired.
