  1. 1 onion , finely sliced

  2. 2 garlic cloves, chopped

  3. 1 inch piece of ginger , finely chopped

  4. 2 tablespoons vegetable oil pinch of turmeric

  5. 1 generous cup red lentil s, well washed and drained

  6. 3 cups warmed vegetable stock pinch of ground cumin pinch of ground coriander pinch of garam masala

  7. 4 firm banana s, thinly sliced salt and pepper

  1. Fry the onion, garlic, and ginger in the oil over low heat for about 10 minutes until soft and golden. Add the turmeric and cook for 1 minute.

  2. Add the lentils to the pan and fry for 1-2 minutes.

  3. Add the stock and bring to a boil, then simmer for 15 minutes.

  4. Add the spices, season, and cook for a further 10 minutes.

  5. A couple of minutes before serving, fold in the bananas and warm through.

  6. Eat with naan, chapattis, pita bread, or jasmine rice.
