  1. 1 cup tomato , seeded, chopped or cherry tomatoes halfed

  2. 1 cup leek s, thinly sliced

  3. 1/2 cup green bell pepper , chopped

  4. 2 tablespoon garlic , minced

  5. 4 red snapper fillets (6 oz each)

  6. 1/2 cup coarse bread crumbs

  7. 1/2 cup Parmesan cheese , grated

  8. 1/2/cup plain potato chips, crushed

  9. 1/2 teaspoon paprika

  10. 1-2 teaspoon cayenne

  11. 2 tablespoons unsalted butter , melted

  12. 1 tablespoon scallion , thinly sliced Lemon wedges

  1. Combine first four ingredients in a bowl. Spread on a baking sheet coated with olive oil. Arrange filets on top of the veggies; season with salt and pepper to taste. Combine crumbs and next four ingredients; toss with melted butter. Divide crumb mixture evenly over each filet, pressing into the fish. Bake 20 minutes, or until filets flake easily when tested with a fork. Sprinkle with scallion and serve with lemon wedges.
