  2. IRISH CREAM & CHOCOLATE CHEESECAKE

  7. --CRUST--

  8. 1 2/3 c Chocolate wafers -- crushed

  9. 1/3 c Butter -- melted

  10. --FILLING--

  11. 2 pk Gelatin, unflavored

  12. 1/4 ts Salt

  13. 1 tb Coffee, instant

  14. 2 c Milk

  15. 4 Egg -- separated

  16. 1/3 c Irish cream liqueur

  17. 1 lb Cream cheese

  18. 1/2 c Sugar

  19. 4 oz Chocolate, semi-sweet

  20. CRUST: In bowl, combine wafers and butter. Press

  21. into 13 x 9 inch glass baking dish. Refrigerate.

  22. FILLING: In saucepan, cook gelatin, salt, coffee and milk, stirring constantly, over medium heat until hot

  23. and coffee is dissolved. Reduce heat. Stir a little

  24. coffee mixture into egg yolks, then pour egg mixture

  25. back into saucepan. Cook, stirring frequently, until

  26. 4 to 5 minutes. Remove

  27. from heat and add liqueur.

  28. Using an electric mixer or food processor, blend cream

  29. cheese and 1/4 cup of the sugar until smooth. Slowly

  30. blend coffee mixture into cream cheese. Chill,

  31. stirring occasionally, until consistency of raw egg

  32. 1 to 1-1/2 hours. Meanwhile, melt

  33. chocolate in double boiler over hot water. Let cool.

  34. Beat egg whites until soft peaks form. Gradually add

  35. remaing sugar and beat until stiff peaks form. Gently

  36. fold egg whites into coffee mixture. Transfer 1-1/2

  37. cups of coffee mixture to small bowl and fold in

  38. chocolate. Using large spoon, alternately spoon two

  39. mixtures over chocolate crust. Use knife to swirl

  40. chocolate through coffee mixture. Refrigerate until

  41. firm, at least 6 hours. - - - - - - - - - - - - - - - - - -
