  1. 1 (8-rib) rack of pork, chine bone trimmed

  2. Salt and pepper to taste

  3. 3/4 cup whole-grain prepared mustard, divided

  4. 1 1/2 cups fresh breadcrumbs

  5. 3/4 cup chopped fresh parsley

  6. 1 tablespoon dried thyme, crumbled

  7. 3 cloves garlic, minced

  1. Preheat oven to 350 degrees F. Season pork with salt and pepper. Brush pork with 1/4 cup mustard. In a medium bowl, combine remaining mustard with bread crumbs, parsley, thyme and garlic. Press crumb mixture evenly over top of pork. Arrange pork crumb side up in roasting pan.

  2. Roast for 1 1/2 hours, or until thermometer inserted into center registers 150 degrees F. Remove pork from oven and let stand 10 minutes; temperature should rise to 160 degrees F. Carve pork, cutting between ribs, and serve.
