  1. 1 L Peanut Marinated firm

  2. 1 cup vermicelli rice Splash of Splash of rice wine

  3. 1/4 teaspoon crushed garlic, or to

  4. 1/4 teaspoon crushed ginger, or to

  5. 1/4 teaspoon chilli, or to

  6. 2 teaspoons light coloured miso paste, or to Fresh chives,

  1. In a pot, fry the tofu in a generous amount of peanut oil until light golden.

  2. Add garlic, chilli and ginger.

  3. Add stock and bring to boiling point.

  4. Add vermicelli and cook until softened.

  5. Add vinegar and mirin and remove from heat.

  6. Smear serving bowls with miso paste.

  7. Pour soup into bowls and serve topped with chives.
