  1. 1 English cucumber

  2. 1 Jicama - (abt 1/2 lb)

  3. 4 Carrots (medium)

  4. 5 tablespoons 75ml Lime juice

  5. 6 tablespoons 90ml Chopped fresh cilantro sprigs

  6. 2 tablespoons 30ml Vegetable oil

  7. 1/2 teaspoon 2 1/2ml Pepper flakes

  8. Salt - to taste

  9. Freshly-ground black pepper - to taste

  1. Seed cucumber and peel jicama. Cut cucumber, jicama, and carrots into 1 1/2-inch-long thin strips. Toss vegetables together with remaining ingredients and season with salt and pepper.
