  1. Trout with Basil & Tomatoes

  2. 4 small trout

  3. 4 medium tomatoes

  4. Juice of 1 lemon

  5. fresh basil leaves

  6. 1 stick butter salt

  7. freshly ground black pepper

  8. Rub the inside of the trout with salt and lemon juice and put a

  9. few basil leaves into the body cavity of each fish. Melt the butter

  10. in a large frying pan. Add some more basil leaves and the fish.

  11. Saute over low heat for approx 15 minutes, then add the peeled

  12. chopped tomatoes and a few grinds of pepper.

  13. Saute for 5 minutes more. Serve the trout on top of the tomato

  14. and basil mixture with any cooking juices poured over.
