  1. 1 teaspoon extra virgin olive oil

  2. 1 tablespoon garlic, minced

  3. 1 1/4 cups shiitake mushrooms, stems removed and julienned

  4. 1 teaspoon dry mustard

  5. 1 teaspoon dill

  6. 3 cups red cabbage, julienned

  7. 1/4 cup red onion, diced

  8. 1/4 cup white wine vinegar

  9. 1 teaspoon black pepper

  1. Directions In a small pot, saute garlic and mushrooms in olive oil over low-medium heat until lightly browned.

  2. Add 1/4 cup water, mustard, and dill, and saute 2 to 3 minutes.

  3. Cover and remove from heat.

  4. Combine cabbage, onion, and vinegar in a mixing bowl.

  5. Stir in mushroom saute and black pepper.

  6. Refrigerate at least 1 hour before serving.
