  2. 2 cups sliced raw potato

  3. 4 cups cold water

  4. 1 cup shredded lettuce (pressed down)

  5. 1 tablespoon chopped onion

  6. 1- 1/2 teaspoons salt

  7. 2 tablespoons vegetable butter

  8. 2 cups hot milk

  1. Add potato, onion, and salt to the water and bring to a boil.

  2. When the potato is about half done, add the lettuce and cook rapidly until the vegetables are well done and broken.

  3. Mash through a colander.

  4. Add the butter to the hot milk and mix with the soup.

  5. Salt to taste, put again through a coarse strainer, and serve.

  6. If cream is used, omit the milk and the butter. .
