  1. 1/2 cup light corn syrup

  2. 1 cup sugar

  3. 1 cup raw peanuts -- cashews or almonds

  4. 1 teaspoon butter

  5. 1 teaspoon vanilla

  6. 1/2 teaspoon salt

  7. 1 teaspoon baking soda

  1. Preparation : In large pyrex measuring cup stir corn syrup and sugar. Microwave on high 4 minutes. Add peanuts. Cook 4 minutes on medium. Have ready buttered cookie sheet. Remove peanut brittle from oven and add quickly the butter, vanilla and salt. Cook on high for 1 minute 15 seconds then add baking soda put through sieve. Stir just enough to blend. Work fast mixture will foam. Pour immediately onto buttered pan, spreading 1/4 inch thick. Cool 30 minutes and crack.
